Cranberry Walnut Oatmeal Cookies

1 cup stone ground whole wheat flour
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp grated nutmeg
1 tsp ground cinnamon
1/2 tsp real maple syrup
1/2 cup dried cranberries
1/3 cup chopped walnuts
3/4 cup rolled oats
1/2 cup soy free vegan butter (e.g. Earth Balance)
1/2 cup cane sugar
1/2 cup brown sugar
1 tsp vanilla extract
2 T almond milk


Sift flour, baking soda, baking powder, nutmeg, salt and cinnamon together. Using an electric mixer, cream vegan butter, both sugars, vanilla extract and almond milk in a large bowl, until smooth. Fold in flour mixture gradually while beating constantly on low speed. Using soft spatula, mix in the maple syrup, nuts, oats and cranberries until evenly distributed.

Preheat oven to 350F and line two cookie sheets with parchment paper. Using 1 tablespoon scoop or measuring spoon, scoop dough into 24 balls, each about 2 T. Place on parchment with 2-3″ between cookies; flatten using bottom of measuring cup or hands. Bake for 15 minutes at 350F; cool on wire rack.
