Caçik

Turkish food is one of our favorite cuisines. Caçik is similar to tzatziki, but this Turkish version is traditionally made with goat’s milk yogurt – difficult to find in western grocery stores. We veganized an authentic tasting version of it here, with readily available Follow Your Heart dairy substitutes.

Ingredients

2/3 cup Follow Your Heart vegan sour cream
1/3 cup Follow Your Heart Veganaise (vegan mayonnaise)
2/3 of an English/Continental cucumber, peeled and seeded
2 Tbsp. fresh lemon juice
1/2 tsp. salt (Himalayan pink recommended)
2 sprigs fresh dill, chopped (about 1.5 Tbsp chopped)
1 tsp. finely chopped flat leaf parsely
1 tsp. extra virgin olive oil

Directions

Finely chop the cucumber. Whisk lemon juice, sour cream and Veganaise together until well blended, then whisk in remaining ingredients. Chill for at least 1 hour, covered, then serve cold as a dip (with pita bread) or condiment for Mediterranean food.
